I'd recommend Parallels at this time. VMware as a company has more muscle, but their product is less mature than Parallels's. VMware will improve their product, but Parallels will keep up. Of the two, I pretty much always use Parallels.

good info. I just bought a new imac. I realize from your post that there are some advantages and disadvantages to both programs, but is there one that you would recommend. One that is slightly better and useful than the other? I really want to know your recommendation, as I will probably take it and run with it.

Just a note...Battlefield 2 will not run in either Parallels Desktop for Mac OR VMware Fusion at this time. These support only select DirectX 8 calls, and BF2 requires DX9. I've tried to run BF2 in the virtual environment, and the splash screen appears, disappears, and nothing else happens. I guess it's probably for the best--with Windows running natively, BF2 still could use a little more horsepower on my MacBook Pro 2.33/2GB (don't get me wrong, it runs great, but there are a few settings I could turn up further). I wouldn't expect much from BF2 in a virtualized environment. The extra time it takes to restart into Windows and back is worth the performance boost.
